Lemon rice or Chitranna a tangy, flavoured rice is a favourite in Karnataka and a must during festive times. The rice being a mix of flavours and not so strong spices, makes it easy to accommodate in a heavy meal.
In a large kadai heat oil and add in mustard seeds, chana dal, urad dal, pinch of asafoetida, few curry leaves, dried red chillies, peanuts, whole cashews and fry till slightly golden.
Now add green chillies ginger and ½ tsp turmeric. Saute for 30 seconds.
Add in cooked rice and salt. Mix well and add lemon juice, fresh coriander leaves and grated coconut.
