A delicious, protein-rich, easy-to-make, must-serve lentil salad in every feast in Karnataka. Popularly called as Moong dal salad or Hesarubele kosambari, it is a quick combination of the healthiest ingredients, that work at keeping the body system cool .
Soak moong dal for half an hour to one hour and drain off the excess water in a strainer.
Add half cup grated carrot, coconut, chilli and lemon juice to the strained moong dal. Mix well, add coriander leaves and salt.
In a small pan heat oil and crackle mustard seeds, add curry leaves, asafoetida and fry for few more seconds.
Add the tempering to the mixed salad and mix again.
